TOPO'S POWER BALLZ

Topo's Power Ballz, adapted from the recipe for Crispy Rice Treats from Food Matters by Mark Bittman

 

2 cups crispy brown rice

1 cup toasted quinoa (or another cup of crispy brown rice)

1/4 cup honey

1 cup of almond (or your preferred nut) butter

1 heaping teaspoon of curry powder

1/2 cup of shredded coconut (toasted if you like)

 

Combine all ingredients except for coconut in a large bowl. Using wet hands, form the wet ingredients into bite-sized balls and then roll in the shredded coconut. Place in a container and allow to firm up in the fridge for at least 2 hours. Snack Powerballz as desired.
