My Arrogant Granola Bars

2 c rolled oats
1/2 c rough chopped almonds
1/2 c unsweetened coconut
1 c pitted dates or date paste
1/4 c honey or agave nectar
1/4 c butter
1/4 c almond or peanut butter
1 c chocolate chips
Toast the oats, almonds and coconut in a 400 degree oven until browned (the coconut browns quickly so put it on a separate sheet so that you can pull it out of the oven while the others are still toasting).  Meanwhile, chop the dates in a food processor until they form a ball and set aside.  Melt butter, nut butter, and honey over low heat until bubbly, stirring occasionally.  Add the toasted ingredients to a large bowl and mix in date paste and melted ingredients until thoroughly combined (this will take some elbow grease but it's worth it!) Add chocolate chips once mix has cooled slightly and then turn everything out onto a 8" x 8" pan lined with parchment paper or tin foil.  Firmly press the mix into the pan then set for at least one hour in the fridge before cutting into bars.
